Macadamia, coconut and mango cheesecake – the perfect summer dessert!

I’m so very excited to post this dairy free mango cheesecake made with coconut cream. This was my first time making a cheesecake without cream cheese and I must proudly say it has worked at treat. In fact, I prefer it.

I like to get probiotics from fermented food where ever I can – and desserts are no exception. This cheesecake is made with homemade, gut loving,  coconut cream yoghurt but for a quicker dessert turn-around, you can skip the fermentation and use coconut cream straight from a can.  

Macadamia & coconut mango cheesecake made with coconut cream is a dessert for everyone. It’s GAPS, it’s Paleo, it’s dairy-free, it’s vegan, it’s raw, it’s refined sugar free and bonus – you can make it full of, good, gut loving bacteria. Most importantly though, it’s also DELICIOUS!!…

Blueberry Jelly Cheesecake – Gelatin Heaven

I’ve a got a thing for cheesecake right now. This is the third on the blog in a short time. Probiotic desserts OMG – this is a whole new world of food pleasure and I’m having so much fun experimenting with gelatin.

Raspberry jelly GAPS cheesecake made from dripped yoghurt.

I have been trying to master a probiotic GAPS cheesecake for years. It took me 4 attempts to get this recipe right. My first 2 attempts failed so miserably that I gave up on it for year. (a coconut version is now on it’s way) 

Back then I was new to baking with gelatin and I hadn’t done adequate quality control homework. A dessert like this requires a premium powdered gelatin. It’s literally make or break! I use this brand ahead of anything else – it’s Australian, it’s ehthical and the results are consistent and perfect every time.…

As my blog name suggests, I (finally) started to listen to my gut and that listening resulted in some big changes! After putting up with a stomach ache for 20 years I thought it high time something changed. In less than six months I put an end to my daily stomach pain.
