I was in my early 20’s when I first noticed symptoms of gluten intolerance however it was another 15 years before I actually sampled life without it. Like many people, I considered giving it up too hard. I wasn’t a big bread eater but I sure loved my cake and pasta comfort meals.
Right away I noticed such a radical improvement in my health that I became kind of obsessed with understanding why! It was actually easy to embrace gluten zero without feeling like I was depriving myself once I knew the facts. Everything I read, (or listened too), armed me with more and more staying power. I tend to see it like I’ve gained a lot, rather than given up anything.
