Gluten is highly inflammatory in the body and for anyone with an autoimmune condition (like me with ulcerative colitis) it’s best avoided completely. It is estimated that one in 30 people have a gluten sensitivity – meaning eating gluten causes inflammation every time they eat it. Are you that person?
I was in my early 20’s when I first noticed symptoms of gluten intolerance however it was another 15 years before I actually sampled life without it. Like many people, I considered giving it up too hard. I wasn’t a big bread eater but I sure loved my cake and pasta comfort meals.
Right away I noticed such a radical improvement in my health that I became kind of obsessed with understanding why! It was actually easy to embrace gluten zero without feeling like I was depriving myself once I knew the facts. Everything I read, (or listened too), armed me with more and more staying power. I tend to see it like I’ve gained a lot, rather than given up anything.
There are some crazy facts about consuming even a skerrick of gluten, that mean I take this lifestyle choice very seriously. Did you know that a small crumb of gluten can trigger inflammation and immune reactions that last up to six months!!!

1. Dr. Rodney Ford
Dr. Rodney Ford – is a pediatric gastroenterologist, nutrition consultant, and allergist. Some people call him the medical food doctor. He’s got to be one of the kindest and most compassionate people in the medical universe! If you have children with sensitivities, he is your man. Author, of audio-book – ‘The Gluten Syndrome: is wheat causing you harm?’ I love this Tedtalk.
2. Dr. Tom O’Bryan
Dr. O’Bryan – AKA ‘The Dr’- specialises in educating people in non-celiac gluten sensitivity and celiac disease. Devoted to bringing awareness, he is super passionate and into ending autoimmunity – he’ll get you listening! Also the founder of ‘The Grain of Truth – The Gluten E-Summit‘ (a fabulous resource to own) and has recently written the book ‘The Autoimmune Fix’. Google him for hours of information.
3. Dr. Alessio Fasano
Dr. Alessio Fasano – is kind of a medical rock star, who is globally recognised for his pioneering research in the fields of celiac disease, gluten intolerance, and leaky gut. There is no website to link you to, but Google his name and you are sure to find numerous articles and interviews on Youtube. This video is very long but well worth a look.
4. Dr. David Perlmutter
Dr. David Perlmutter – known as the ‘Empowering Neurologist’ he is kind of a celebrity doctor, public speaker, researcher, and author. Best known for his book ‘Grain Brain’. Youtube has extensive interviews.
5. Dr. William Davis
Dr. William Davis– is a cardiologist, self-professed seeker of truth and health crusader, He is also the author of the Wheat Belly books and cookbooks plus the founder of the Wheat Belly Lifestyle Institute
6. Anne Sarkisian
Anne Sarkisian is an authoritative advocate for the awareness of celiac disease and non-celiac gluten intolerance. Her book, ‘Toxic Staple: How Gluten May be Wrecking Your Health, and What You Can Do About it!’ along with her website, bring cutting-edge information.
